Desserts do not have to be fancy. Only delicious. And what could be more delicious than apples and strawberries topped with a crumbly, sweet vanilla topping? This is the perfect summer recipe. Quick to prepare, very little effort and perfect served with a generous serving of ice cream.
Strawberries are in season right now and at their very best. If you have some fresh and juicy strawberries than you can check out my No-Bake Vanilla and Strawberry Cheesecake recipe or my delicious Strawberry Shortcake Cake. However, if you would like a more simple and easy to prepare dessert, then this is perfect. It can also be made using frozen berries so does not need to be confined just to the summer. And of course it would be fantastic with raspberries or blackberries.
I do not add any additional sugar to the fruit as I find it sweet enough, however, if you prefer a sweeter dessert or if your strawberries are a bit tart then go ahead and sprinkle on a little sugar to taste. This does make a large pudding, enough for 8 servings, so to make a smaller portion it can be easily scaled down by halving all the ingredients.
In the recipe I have called for a mix of apple and strawberries and have not specified individual amounts as for me, it depends on what I have in the fridge. I tend to use more strawberries as they cook down more but really use what you have, it will be delicious no matter what!
Apple And Strawberry Crisp
Ingredients:
900g mix of strawberry and apple
1 and 1/2tbs vanilla essence
200g oats
200g all purpose flour
125g soft brown sugar
200g melted butter
Method:
Preheat the oven to 180°C (356°F).
Dice the apple finely and cut the strawberries in half.
Place into a medium sized baking dish and pour over 1/2tbs of vanilla. Mix well.
In a separate bowl weigh the flour, oats, sugar, remaining vanilla and butter.
Mix together until it resembles breadcrumbs.
Spoon the topping evenly over the apples and strawberries.
Bake for 30 minutes.
Serve hot with vanilla ice cream or custard.
